Courgette Ravioli with shredded beef

This is one of those recipes that appeared in my Pinterest feed on a Friday, and was on our plates on the Saturday. 

I haven't found many good gluten-free filled pastas in the UK (although Whole Foods in the US has a few delicious choices that I devoured when we were there) and so I was very excited to make a faux-violi!!

Fast Diet Recipe: Green Pea Hummus

I thought I would provide a slightly healthy relief from my recent Bunny Party recipes with a Fast Diet recipe idea...

After the past few weeks/months of indulging a little too much, travelling and trying new foods, and working my butt off with wholesale orders, I've kind of let my eating habits suffer a little. 

And I have felt the impact on my hips!! So, hello Fast Diet, I am back! 

If you read A Cup of Jo you would have seen this one listed a few months back, and I pinned it and have basically waited for a rainy day! Well, that rainy day was yesterday.

Gluten Free White Chocolate Mudcake

I have posted my recipe for a regular White Chocolate Mudcake many times. 

I made it as the wedding cake at Saraid's wedding;

As the Grooms' cake at Julie's wedding;

And at many more baby showers than I remembered to post about too!

I wanted to have one of the cakes be gluten free at Madeleine's bunny Birthday party and so adapted my standard white chocolate mudcake recipe to use as the little cakes to accompany the main bunny rabbit butter cake.

This recipe appeared in my Pinterest feed a few days before her party that instantly went to the top of the list!

Gordon Ramsay's Home Made Baked Beans

Its been a while since I've posted a Gordon Ramsay recipe, so on this particularly grim British day, I thought I'd warm you up with Gordon's home made baked beans. 

This really should be a guest post from my Husband, but, since he'd much rather be a passive participant, he has graciously allowed me to write the post on his behalf. 

There's something very endearing about a man cooking breakfast, and certainly something I encourage. 

While Pete is definitely in his element alongside the BBQ, he also does a mean Sunday brekkie.

Macadamia Nut Brittle

A few weekends ago I attended a bloggers event for "Bake for Bumps". 

It was such a wonderful afternoon and I was so proud to be involved in such a worthy cause. 

AND well, there was some fairly spectacular baking produced!!!

Emma put together a little goodie bag for everyone as a little thank you for coming, with some traveller-inspired beauty products.

I wanted to contribute a little something to the goodie bags and so made some Macadamia Nut Brittle for everyone to chew/crunch on for the trip home. 

I haven't had Macadamia Nut Brittle in years, I had completely forgotten how amazing it is!!!

Apple + Peanut Butter + Cinnamon + Walnuts + Honey + Coconut


I just couldn't think of a name for this snack

other than "this is definitely not a donut" 

and so alas, here you have it.... 

an apple, 

topped with peanut butter, 

sprinkled with walnuts that have been dusted with cinnamon, 

all drizzled with honey and scattered with coconut (is that enough verbs for you?).

Zucchini, Sweet Potato & Polenta Slice (Gluten Free)

This recipe is an adaptation of a Zucchini Slice recipe that I used to love growing up. 

I have reduced the amount of butter and cheese (both by half!), and substituted creamed corn for regular corn and polenta for flour, and yet to me, it tastes every bit as good as the original! 

I played around with this recipe a few times, but have finally settled with one that I love. 

It has the right texture and right balance of flavours. 

I used to use gluten free four but then thought I would give polenta a go and I love it! It gives it a great spongy texture and is more wholesome than flour so you get a few extra slow burning calories.

Ever since becoming gluten intolerant a year ago, Financiers have been my go-to cake. 

Made with almond meal they are dense and sweet, and I make mine with polenta for a little extra crunch! 

12 months ago I posted a recipe for Blueberry & Lavender Financiers, and today I wanted to share a new flavour combination, Raspberry and Lime. 

My friend Meeche is a coeliac and Saraidy makes her the Blueberry Financiers every time she wants to sneak some sweet baby cuddles, and so I thought I'd share a new flavour for you girls to enjoy!!

Homemade Chickpea Falafel Wraps (GF)

I made my first chickpea falafel years ago when we were living in Melbourne and they've been on regular rotation ever since.

My funniest memory of them though was two years ago just after my daughter was born. I had a doula for the few weeks who was very healthy, a little alternative and VERY surprised that "I" had made falafel (not even "she" made them herself!).

I was as much insulted as I was pleased for surprising her!

ANZAC Biscuits with Caramel Ganache

Today is ANZAC Day. A day to commemorate the anniversary of the day our Australian & New Zealand troops landed in Gallipoli.

It is a solemn and significant day back home, and again, it makes me miss being home.

Coming from a military family, and ever since I can remember, I've always been at Dawn Services on ANZAC Day. 

And until I moved to the UK and had a baby, I never missed a service.

Homemade Nakd Bars (Larabars)



I've been thinking about making my own Homemade Nakd Bars for some time, and finally got around to it this weekend.

And they were SO simple!

I have made another batch since and played with the flavours a bit too.

Ever since becoming gluten intolerant a year or so ago I have loved Nak'd bars!

They are based on blended dates and sultanas mixed with a variety of different nuts and flavours.

Weekender Biscuits (GF)

This is one of those recipes from The Australian Women's Weekly "Big Book of Beautiful Biscuits" cookbooks that I think every kid growing up in Australia would know, but the rest of the world raises an eyebrow to! There's a lot of things in that category I have discovered, but don't worry there's not a trace of vegemite to be found. If you'd rather, think of them as "Cornflake Cookies"

I think these are called Weekender Biscuits because they don't last more than the weekend. 


I haven't had these cookies in such a long time, but when I was in Jersey and bought an entire box of Gluten Free Cornflakes (to last just 5 days) I had plenty to spare and so I thought I may as well try and see how they go being gluten free. And well, they were delicious to be frank! 

Rolled in cornflakes (which can be GF) and filled with sultanas (to add some moisture) you would never know they aren't the real deal. We ate an entire batch when we were wandering around the Jersey Zoo, so I had to make another batch to photograph. Shame. 



All the kids gobbled them up too, and each batch lasted just the one day, so maybe they can be called the Saturdayer Biscuits in our house! 

I thought I'd share it with you this fine Friday morning in case you are looking for a new cookie to try this weekend, or want a nostalgic trip down memory lane! Either way, nom nom nom. 


So whatever you call them, however long they last, they are definitely worth making this weekend!


I hope you have something fun planned for the weekend! We are hoping to cheer Oxford on in the Boat Race (unless its raining, we are fair-weather supports) and are hoping to get to the V&A. What have you got on?

The Fast Diet Recipe Files - Thai Pumpkin Soup (with carrot and sweet potato)

Happy Tuesday!!! I hope your week is off to a great start! The sun is shining in London, so everything is automatically much brighter, without even trying!!!

I have been trying out lots of new recipe ideas for the Fast Diet lately and some have been rather bland but others just bursting with flavour. This soup is of course the latter, I'm not going to share the rubbish ones that will make you want to feast instead!!! Whilst things are starting to warm up in London, I am still sneaking some soups in before the salad season really begins. 

Pumpkin soup was always my go-to meal when I was sick, it was like a hug from the inside. I still love it so much, but pumpkin is not as readily available in the UK as Australia so I don't tend to make it so often.

This Thai Pumpkin soup is perfect for the Fast Diet because it is low calorie but intensely flavourful! I was expecting red curry paste to be high in calories, but when you are only adding 1 tablespoon, the mere 17 calories are exceptionally effective. With only 195 calories per serve, it is chocked full with vegetables and being nice and thick it is perfectly filling. I made this for lunch and then had it for dinner I loved it so much!!!

Gordon Ramsay Caramelised Figs : An Anniversary Treat

I've been trying so hard not to write another Gordon Ramsay recipe, but I just can't help it, these are too great to not share!

I love meals that look impressive, but that are actually really easy to make. It was my Husband and my anniversary this week and even though we didn't exchange presents, I did want to make him a special dessert. And as "fruit" is the traditional symbol of a 4th Anniversary, I knew that I wanted to make a fruity dessert. 

When I saw Gordon baking some figs on his Ultimate Cookery Course program I was intrigued. I knew I didn't like figs, but these looked delicious. To say that I don't like figs, is well, a stretch, considering I had never even had one. I am a texture person, and figs challenged my perspective on texture!! Its weird but true. But the seeds, the thick skin, the flesh, it was just all too texturally diverse!!

But I was curious enough with this recipe to give figs a go. When they look like this, its kind of hard to keep nattering on about texture!

So I made some caramel, baked for 10 minutes and then THOROUGHLY enjoyed my first (and second) fig! 

It is so easy to do, and looks so striking on the Rosemary stick.

If you like figs (or if you too are scared of them) then you will love them baked, caramelised and on a rosemary skewer!

Ingredients (serves 4)

4 rosemary sprigs
12 fresh figs
4 tbsp icing sugar
3 tbsp balsamic vinegar
6 tbsp caster sugar
30g butter, cubed

Method:

1. Make the caramel - - melt the sugar in a pan until it starts to colour, approximately 5 minutes.  Remove from the heat and mix in the butter, 2 tablespoons for balsamic vinegar and a dash of water.

2. Remove most of the leaves from the rosemary, all but the end sprigs. Cut the woody end of the rosemary into a sharp point, and thread through the tops of each fig.

3. Sprinkle the icing sugar across the figs and drizzle with 1 tablespoon of balsamic.

4. Place the threaded figs in a baking dish and coat with the caramel.

5. Bake in a moderate oven for 10-15 minutes.

6. Serve immediately with ricotta cheese (or maple cream if you want a real sweet hit) and Gordon sprinkled some almonds over them too, which would be lovely, but I didn't have any on hand. 

There is the slightest hint of rosemary within the figs, which is perfectly balanced by the caramel. The balsamic vinegar in the caramel seems odd at first, but it totally worked. 

I paired the figs with a  maple cream, but it really should go with a dollop of ricotta, as the cream was too sweet. So that's what I will change for next time! 


The flesh is soft and sweet, the seeds crunchy, and the caramel is just divine. My caramel was a little chewy because I was taking photos before serving, but it didn't compromise the flavour, I was licking the bowl clean!

I'm so happy that I finally gave figs a go, I can't wait to make them again, but this time with the ricotta! Am I the only one who has hesitated with figs??
